Whilst walking in the backstreets of Yambol, this bunch of thyme was found growing wild on some wasteland. A perfect freebie herb to add to winter stews.
Yambol is not the prettiest City in Bulgaria, but it does have a unique character which is now in the process of being captured by camera. What you see now in Yambol will be short lived in a world of change, especially with the EU strangling the heart and soul of Bulgaria's culture with directives and uniform regulations.

Spinach Dock (Lapad) Growing Wild in Yambol
Free food for grabs in Yambol. Spinach Dock or as it is known in Bulgaria as lapad, grows wild and is picked, boiled and eaten mixed with rice on many dinner tables this time of year.
